Who is man behind the "chin-chin?" And what does it really mean? According to Marko Dedic, "chin-chin" is a salutation that comes from somewhere in Europe. According to other sources, it may have originated in Italy, and means "to your health." Of course, it's much more fun to hear Marko explain it.
Marko's exceptional taste, attention to detail, and magnetic personality has lent itself to the restaurant business, helping him to advance very quickly in the field. Upon arriving from his native country, Serbia, in 1998, Marko's cousin and former chef at the Patina group recognized his innate hosting ability, and helped Marko secure his first position in the restaurant business. From the early stages of his career, Marko has found himself to be in the fortunate position of working closely with outstanding chefs and top notch wine sommeliers.
Marko's love of San Diego encouraged him to make it his permanent home. His next move was to serve as the manager of "When in Rome'" in Encinitas. Ultimately, Marko found his way to Mille Fleurs, where he immediately connected with everyone there. Marko has enjoyed working at Mille Fleurs for the past six years, honing his food and wine knowledge while dazzling guests with his sense of humor and charm.
Marko also enjoys a good game of tennis and can be found playing on the courts any chance he gets.
